Recipe Notes: Prior to boil, draw off 2 gallons and separately slow boil to reduce to 2 quarts or less. Wort should be reduced to a thick, almost caramel state. Add this back to the main boil prior to cooling. Water calculations: 14.5 gallons @ 172 degrees = 154 mash temp. Sparge with 12 - 16 gallons to achieve boil volume. Actual OG 1.080 on 1/30/11; FG = 1.016 on 3/13/11. ABV = 8.5%
